The grapes are meticulously selected before passing through the doors of the press.
In order to select the best grape varieties, samples are taken until the harvest to ensure the constant quality of the grapes.

The wines made for Pommey-Damartin champagnes wait at least 36 months in the cellar to perfect their subtlety.

With soil mainly composed of chalk and clay, the plots are mainly composed of Meunier, a grape which brings freshness and from which our champagne expresses its notes, pinot noir and chardonnay are also used on the most beautiful plots.
Our approach also allows winegrowers to better remunerate the work they do all year round, the prices per kilo being set by them during a collective vote.
